The Champagne

After its second fermentation in the bottle a Champagne rests on its spent yeast, the lees. The longer it rests, the softer and more biscuity it drinks and the finer the bubbles. The rules ask for 15 months. Every Champagne here goes well past that.

Classic Cuvée - Easy to drink and easy to like. Soft rather than sharp, from a family who have grown Champagne at Charly-sur-Marne in the Marne valley since the seventeenth century, and 24 months in the cellar before it leaves. The bottle for a room full of people rather than a tasting table.

Premier Cru - For 300 years the famous Champagne houses bought their grapes from the Autréau family at Champillon. Since the 1950s the family have kept the best for their own bottles, picked by hand, and Premier Cru on the label means the villages are rated among the best in Champagne. 36 months on the lees, and the extra weight in the glass to show for it.

Sea Salt Caramel Truffles

Milk and white chocolate shells over caramel that is still molten in the middle. Cornish sea salt in the caramel stops it turning sweet.

Salted Milk Chocolate Praline Truffles

A quarter of the box is hazelnut, roasted in-house and folded through Sur del Lago milk chocolate. Each one is dipped and then dusted in cocoa, so they are rich and old-fashioned rather than shiny. Contains nuts.
