The Champagne

After its second fermentation in the bottle a Champagne rests on its spent yeast, the lees. The longer it rests, the softer and more biscuity it drinks and the finer the bubbles. The rules ask for 15 months. Every Champagne here goes well past that.

Classic Cuvée - Easy to drink and easy to like. Soft rather than sharp, from a family who have grown Champagne at Charly-sur-Marne in the Marne valley since the seventeenth century, and 24 months in the cellar before it leaves. The bottle for a room full of people rather than a tasting table.

Premier Cru - For 300 years the famous Champagne houses bought their grapes from the Autréau family at Champillon. Since the 1950s the family have kept the best for their own bottles, picked by hand, and Premier Cru on the label means the villages are rated among the best in Champagne. 36 months on the lees, and the extra weight in the glass to show for it.

Willie's Cacao, Four Bean-to-Bar Chocolates

Willie's Cacao make chocolate from the bean in small batches in Devon, from cacao, cane sugar and cocoa butter alone. There are 4 bars of 50g, 3 dark and 1 milk, each from a different estate.

Las Trincheras 72%

Just 3 ingredients and a long slow conche, which is what takes the bitterness out. A 72% that comes out nutty and round rather than dry, and it wins over people who say they do not like dark chocolate.

Luscious Orange 65%

Chocolate orange as it should be. Real oranges, dark chocolate with a warmth like honey to it, and nothing else in the way. The one that disappears first.

Sea Kissed Almond 44%

The milk bar, made from cacao with a coffee-like depth to it, so there is something behind the sweetness. Cornish sea salt sharpens it and the roasted almonds give it crunch.

Almendra 70%

Marcona almonds are the sweet, buttery ones, and they make up a fifth of the bar, so there is one in every square. Roasted just enough to set them against the dark chocolate.
